dockJanuary is pounding. Grueling. The Polar Vortex swirling its icy breeze clear across the continent. What else is there to do but think of food. Fast. Hot. My advice for what to cook? Hearty food: White Bean Stew with Chicken Sausage. From start to finish in 30 minutes. Sound like a dream come true? Well yes, it is, and luckily, you can make it yourself quite easily.

Ingredients: onions, carrots, kale, cabbage, white navy beans, organic vegetable stock, chicken apple sausage, water, garlic, salt & pepper

Recipe:  Saute the sausage, which has been cut into bite-size pieces, in olive oil. Once the meat browns set aside. Saute sliced onions in this meaty oil, then add chopped carrots and sliced garlic cloves. Cook this mixture for a few minutes to release the flavor and then pour four cups of vegetable stock plus two cups of water into the pot. Remove the main stems of the kale, chop the leaves and add to your stew. Drain and rinse two cans of white navy beans before adding these. Slice thin 1/4 of a cabbage and add along with the cooked sausage. Salt & pepper to taste. Cook until all the vegetable are done. 20-30 minutes. (Vegetarian Option: leave out the sausage) Serve in your favorite mug and enjoy for a few days! (You will have plenty of left-overs)

Stay warm dear ones. From state to state we are dealing with adverse weather. Make soup. Smile. Tell your kids you love them. Run a bath at day’s end. We will make it through. Trust me. The extra garlic will help ward off other stuff too.
